Our First Concern

Ms. Linda Chuang, a Hakkanese with expert Hakka pickling craftmanship inherited from her parents. Since her teens, she has taken a strong interest in cooking and to become a world-famous chef has been her lasting ambition. However, she became a nurse due to her father’s insistence. The heavy workload of being a nurse never stopped her pursuit of her dream to become a chef. She takes great pleasure whenever she cooks for her family, and she gains lots of inspiration once again.

Twenty years later, she retired from her nursing job and resumed the pursuit of her dream. She stepped into the food industry and thanks to her medical background, she inspects our products regarding both health benefits and traditional handcrafts (cut and selected by hand, pressed by weights instead of machine dehydration). Her concerns for good health involves the right control of salt and sugar, the freshness, and nutrition found in all our products.
Pickling Lecturer

Ms. Chuang was invited by Taipei City Government to be a pickling lecturer and demonstrate her culinary skills to the public.

Selection
choose and cut by hand.
We insist on selecting and cutting every cabbage by hand, which takes a much longer time, for the sake of the best quality. All cabbages come in many sizes and varieties. We remove their outer leaves and use only the sweetest parts. Plus, with our pickling experience, we cut every cabbage leave to its best size according to its features.

Rinse
Washing the cabbage.
keep washing the cabbage with clean running water, rinsing the excessive salt to keep it fresh and crunchy.

Stir
Perfect 20 Turns.
After much experimentation, we have found a rule of thumb called “Perfect 20 Turns” to get the cabbage properly stirred. This way allows its leaves to mix evenly with the sauce after twenty turns at low speed. The gentle pressure and low speed of the mixer keep the pickles nice and crunchy.

To constantly improve the process and environment, our new factory opened at the end of 2018. Our purchasing, manufacturing and shipping standards all meet the requirements for HACCP and ISO22000 certificaton.
To upgrade the manufacturing quality, we have our own set of unique equipment to rinse, press and dry vegetables to the highest quality. In our factory, kimchi is not just kimchi. It’s the result with lots of expertise, experience and care.

It is made with the exclusive process of “select-rinse-stir.” With nonstop running-water rinse, it always tastes fresh and crunchy.
Our kimchi is mixed in a sauce made from garlic, chili and carrot juice. Its fresh, slightly-sweet taste makes it a good appetizer over rice.

Gingered Shredded Seaweed
Our product is cut into shreds and retains its silky smooth taste.
First we blanch it with hot water, and then use a constant stream of cold water to keep its chrunchiness, much like the process found in a sauna bath.
The fine seaweed absorbs the gingered sauce entirely.
The fresh ginger juice and tempting vinegary aroma delights the senses.

Spicy Fermented Tofu Kimchi
After much experimentation, we use the most suitable cabbage to make this style of kimchi combined with a sauce made from fermented tofu (also known as “Taiwanese Cheese”) , an popular side dish for Taiwanese traditional breakfast.
The spicy sauce is blended with tangy fermented tofu, which is a perfect match.
